Breakfast Rice Bowl with Dried Plums, Pears & Almonds

I’ve been on a dried fruit + whole grain kick lately so I was intrigued when a box of Sunsweet Plum Amazins showed up on my doorstep. These diced dried plums (formally known as prunes) have 50% more fiber than raisins and dried cranberries. And since they also have less sugars, they are not overally sweet – in a good way – as they don’t overwhelm a dish. I threw a good handful into a pot of brown jasmine rice as it cooked and came up with this recipe. At first, I was going for some type of pilaf but after adding in almonds and cinnamon, I decide this would make a tasty morning dish – after adding in pears with a drizzle of honey. And as I’ve posted before, why not try other grains besides oatmeal for breakfast?

Breakfast Rice Bowl with Dried Plums, Pears & Almonds

Makes 4 servings

Ingredients

  • 2 cup water
  • 1 cup brown jasmine rice, uncooked
  • 1/2 cup diced dried plums (like Plum Amazins)
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup slivered almonds
  • 1 large pear, cored and diced
  • Honey

Directions

  1. Bring water to a boil in a large pot. Rinse rice and add to pot with dried plums, butter, cinnamon and salt. Reduce heat to low, cover with lid and cook for 40 - 45 minutes.
  2. Remove from heat and fluff rice with a fork.
  3. Gently mix in almonds and pear.
  4. Before serving, drizzle honey on top of each bowlful.
