Avocado Lime Popsicles

Ahh, I could do 20 posts on my love of avocados. So, why have I only recently have made them a true staple in my kitchen? In the past, I’d wait for a guacamole craving or a specific recipe using them as ingredient. But now, they’ve earned “banana” status in my fruit bowl – meaning, I have always have a few on hand, ripening and ready for use.

A few years back, I had the good fortune review this lovely book My Sweet Mexico by Fany Gerson. Her avocado ice cream recipe is simple and yet so divine. And avocado is a fruit after all, making it a no brainer for summertime desserts. I finally bought some popsicle molds (after reading Serena’s post) and my adaptation of the avocado ice cream was the first thing I tried.

Avocado Lime Popsicles

Makes 5 popsicles

Ingredients

  • 2 ripe avocados, peeled and pitted
  • 1 cup low fat milk
  • 1/4 cup sugar
  • 2 tablespoons lime juice (from one large lime)
  • 1/8 teaspoon salt

Directions

  1. Put all ingredients in the blender and blend until smooth.
  2. Pour into popsicle molds and freeze.

  3. What an interesting use of avocados! I use avocados all the time – in salads, on top of burgers, on fish tacos…so many good ways to enjoy them!

  4. Such gorgeous green popsicles! I think this would be a fun summer project to do with my kids. I think my daughter’s first food must have been avocado. Delicious!
