I recently got a fun surprise in my CSA share - popcorn still on the cob! This is definitely more than just a fall decoration.
Popcorn is easily my go-to favorite snack. I eat it at least 2 -3 times a week, perfecting the stovetop popping over the years (you’ll never go back to microwave popcorn after doing the pot method.) After a few twitter convos with some of my fav RD bloggers - Inspired RD, Eat Well With Janel & Whole Health RD - I’m now a convert to popping it in a little bit of coconut oil and sprinkling with some truffle salt. Heaven.
This inspired me to do a little popcorn recipe round-up with recipes from both me & Serena as well as a few other favorite bloggers. And a fun nutrition fact, popcorn is a whole grain! Happy popping!

The Hubby is the popcorn maker at our house. EVOO heated on the stove then add the popcorn.
It is required to announce “It’s POPCORN Time” before he will make it.

Love the official announcement requirement. I go back and forth between coconut oil, EVOO and canola when popping. Hmm, should do a taste comparison one of these days…

I love either caramel corn or Red Hot Popcorn. And of course you can’t go wrong with kettle corn either.
Fun round up and I love those little popcorns-adorable! I make mine just like you and use either virgin coconut oil or high oleic sunflower oil, plus a little salt. Funny…last night Iwoke up in the middle of the night I couldn’t get back to sleep right away so I started thinking about recipes for the blog, and one of them just happened to be popcorn balls
