It’s time for another Secret Recipe Club post and this month I was assigned to food blogger Allison of Alli-n-Son (clever, eh?) I love her tagline which is “Motherhood, Baking and Boys with a Side of Chocolate.” Besides me only having one daughter, we have everything else in common according to that title!
There were so many yummy looking recipes to choose from on Allison’s blog, especially from her Sweet Tooth Friday selection. I also was tempted by the Caramelized Sriracha Pumpkin Seeds. But in the end, I decided to try this delicious sounding Spicy Peanut Noodle Salad. I adore all kinds of Asian cuisine – Thai, Vietnamese, Chinese, Japanese – but why is it that I only cook with those ingredients occasionally? Time to change that.
What I love about this recipe is that it uses pantry staples (peanut butter, soy sauce) and you could easily substitute in whatever veggies you have on hand. The only switch I made was to use regular peanut butter instead of reduced fat peanut spread (my nutrition nugget: you only save a few calories by using reduced fat and there’s extra sugar added so just go for the real stuff – you have this dietitian’s blessing!)

That looks so delicious. My kiddos love spicy food so I’m going to have to try them. They would be great with Asian Sticky Chicken!
Would be SO good w. Sticky Chicken – you could easily ramp up the spice for your kids. Next time I’m going to add sriracha sauce & shrimp!
